EdWort's Apfelwein

This "Apfelwein" is a popular brew at a brewing message board that I've been spending a bit of time on. It's very similar to an alcoholic apple cider, but since it uses wine yeast, it finishes very dry and tart. It tastes quite a bit like wine, and packs a pretty good punch.


INGREDIENTS
  • 5 Gallons TreeTop Apple Juice
  • RedStar Montrachet Wine Yeast (5 oz)
  • 2 lbs. Dextrose Monohydrate
Primary Fermentation @ 70°F for 38 days.
Force Carbonation @ 40°F & 28psi for 2 days.
Served @ 38°F & 7 psi.

ABV: 8.0%

This stuff is WAY better than I ever would have expected. I just made a second batch after trying my first batch. I really should have made more of this... This 5 gallons will have to last the next 6 months.
